CHARDONNAY 2007 Wild fermented in small batches. 50% lees strirred in French oak for 10 months with full malolactic fermentation. The balance was unoaked and the result is a wine with fruit and oak in harmony. Fresh green apple and melon aromas over butterscotch and toast.

MC SYRAH 2009 MC is an ancient winemaking technique called maceration carbonic, it is where uncrushed grapes are wild fermented for sixteen days before pressing. The un-oaked wine is fresh with lifted berries, cherry and spicy overtones.

RW SHIRAZ 2006 (375ml) Hand picked Shiraz bunches were layed on straw beds for 88 days before crushing and wild fermentation. The Raisin Wine was then aged in french oak for 18months. A distinguished complex wine is the result rich in bitter chocolate, spicy cinnamon and wild berry flavours.

BOTRYTIS 2006 (375ml) This wine was made in four small batches, as we only hand picked when the grapes were sufficiently affected by botrytis from 21st May to 18th June. The resulting wine was fermented in French oak and then blended.
